yum.

Last week we had an impromptu taco and basketball night.  Everything was delicious.  But our [new] favorite thing was the spicy corn fritters.  They were delicious.  

 
I mean!  Out of a magazine right?  We added a little bit of red pepper flakes to the batter so they were mildly spicy.  Oh man!  They were crunchy, sweet, spicy and so yum.  The recipe has a dipping sauce but calls for rice vinegar and we had issues finding that at Target and then never made it anywhere else to look so we skipped the sauce but next time we make these we are making the sauce because I can't imagine these getting any better but if they did I would guess it would be because of that sauce.


Topped with black beans, guac, hot sauce, and green onions.  We also dipped them in spicy ranch [so ghetto, I know] and salsa, both were rather good.


I also think for you vegetarian folks this would be good on a hamburger bun with some lettuce, tomato, cheese and barbeque sauce...just sayin.
